White wine:Fermentation is in stainless
steel tank with automatic control of the temperature at a maximum
of -18°c. After the fermentation, the wine stays on fine lees to
improve the body and complexity. It is filtred just before
bottling. Red wine: To obtain a
fruity and full bodied taste, fermentation takes seven to ten days
under controlled temperature. Bottling takes place about two years
later.
